High protein pumpkin brownies

Ingredients:

300g fresh pumpkin

1/2 cup nuttelex lite spread

1/3 cup cocoa powder

120g WPI powder (vanilla or choc)

2 tsp pure vanilla extract

1/4 tsp salt

1 tsp cinnamon

1/2 cup SF maple syrup

1/4 cup crushed peanuts

50g milk chocolate drops


Procedure

01 Cut up pumpkin into small cubes and boil in water over the stove for 15 minutes. Drained and mash.

02 Combine all ingredients well in a bowl until thick in consistency.

03 Pour mixture into a lined-square baking tin. Sprinkle with your choice of topping (i chose peanuts!)

04 Bake brownies at 180 degrees for 25-30 minutes. Take out and cut up into 10 pieces.


TIPS

Refridgerate overnight to set more! Could use sweet potato instead!
