Ingredients:
- 1 x large onion (diced)
- 3 x cloves garlic, finely chopped
- 1kg extra lean beef mince
- 600g tomato passata
- 1 x 410g can diced tomatoes
- 1 x 350g jar leggos tomato & roast garlic sauce
- 4 tbsp tomato paste
- 150ml red wine
- 1 tbsp extra virgin olive oil
- 4 (500g) x large white/wholemeal lasagne sheets (fresh or dried)
- 1 x 400g can lentils
- 2 cups spinach, finely chopped
- Herbs & spices, to taste
- 1 cup low fat mozzarella, cheese, grated (for layering)
Cheese sauce ingredients:
- 60g butter
- 1/2-1 cup plain flour
- 200ml extra skim milk
- 1 cup extra low fat cheddar cheese
Procedure
1) Preheat oven to 200 degrees celsius fan forced.
2) Add olive oil to a pan over the stove, sauté onion and garlic on low-med heat, sauté until onion is lightly brown for approx. 5 minutes.
3) . Then add mince and cook for 10-15 mins or until mince cooked through and is browned.
4)Add can of tomatoes, passata, leggos tomato sauce, tomato paste, lentils and red wine. Mix well and let simmer for 10 minutes on low heat. Season with herbs, salt and pepper, to taste.
5) Take off stove and allow mince mix to cool for approx. 30 mins.
Cheese sauce:
6)Melt the butter over low heat on the stove, slowly add flour, milk and cheese - little bits at a time! Stand over stove and stir cheese sauce for 10 minute over low heat, adding more of each ingredients until a nice smooth thick consistency if formed.
Assembly of lasagne:
7) Brush the base of a large oven proof dish with small amount of olive oil.
8) Line the dish with lasagne sheets so that the sheets completely cover the bottom of the dish. Add a layer of mince and spread out the cheese sauce on top. Add some spinach and low fat mozzarella cheese. Repeat this entire process, stacking layers upon layers alternating lasagne sheets with mince/cheese/spinach until dish is full.
9) Sprinkle extra cheese evenly over top layer then cover lasagne with foil and cook for 30-35 minutes on fan forced function.
10) Take out of oven and let cool, serve with side of salad or roast vegetables! Enjoy!
TIPS
Could use whatever veg you enjoy - pumpkin would work well in this too!
This would make for a great pre game or competition meal!
