Savoury Egg Muffins

Ingredients:

- 10 large free range eggs

- 250g whole cut ham (Extra Lean)

- 150g cherry tomatoes (chopped)

- 150ml semi skimmed milk

- 100g cheddar cheese, reduced fat (grated)

- 1 cup baby spinach (chopped)

- 1 tbsp, chopped fresh chives

- 1 tsp black pepper

- Salt, to taste


Procedure

1) Preheat the oven to 180 ℃ (fan oven 180 ℃).

2) Whisk up the eggs and milk in a large bowl, then add in the grated cheddar. Continue to mix well.

3) Chop ham into small pieces, then add to the egg mixture, along with fresh chives and roughly chopped spinach & tomato.

4) Finish with black pepper and a pinch of salt.

5) Grease a 12 cup muffin tray then divide mixture evenly.

6) Bake in the oven for 20 - 25 minutes until golden on top. Let cool before carefully removing from the tray.


TIPS

Could add any veggies into these you enjoy!

Use extra virgin olive oil to grease muffin tray.
