Beef Cottage Pie

Ingredients

Beef Filling

1 ½ tbsp Olive Oil         

2 Garlic Cloves, minced       

1 Onion, finely chopped      

1 Carrot, finely chopped

1 Rib Celery, finely chopped

1 Small Zucchini, shredded 

¾ tsp each Dried Thyme and Rosemary 

1kg Extra Lean Beef Mince          

¼ cup Flour, plain/all-purpose          

¼ cup Tomato Paste          

2 cups Beef Stock 

½ cup Red Wine (or Water)

1 Beef Bouillon Cube, crumbled        

1 tbsp Worcestershire Sauce

2 Bay Leaves, fresh         

¾ tsp Salt 

½ tsp Black Pepper

1 cup Frozen Peas


Mashed Potato

1.2kg Potatoes, peeled and cut into 2.5cm 

2 tbsp (30g) Unsalted Butter

⅔ cup Milk (whole or low fat) 


Cheesy Crust

2 – 3 tbsp grated parmesan, optional

Fresh thyme leaves, optional garnish

 

Procedure

1. Sauté: Heat oil, onion and garlic, and cook for 1 minute. Then add carrots, zucchini, celery, thyme and rosemary, and cook for 3 minutes.

2. Add the mince, cook until browned.

3. To make the sauce, add the flour, tomato paste, stock, wine, beef cube, Worcestershire sauce and bay leaves. Leave to simmer for 30 minutes until it has thickened, before adding salt, pepper and stirring in the peas. 

4. Allow the sauce to cool. In the meantime, pre-heat the oven to 180°C fan forced.

5. Boil and mash the potatoes with the butter and milk.

6. In an oven-safe container, add the beef, spread the mash over the beef and fork the top with lines, before sprinkling parmesan on top.

7. Bake for 30-40 minutes until golden and bubbling. Rest for 5 minutes and then garnish with thyme.
