Cinnamon Scrolls

Ingredients:

Cinnamon Roll Dough:

4½- 5 cups Plain Flour 

⅓ cup (75g) Sugar

4½ tsp Instant Yeast

1 tsp Salt

1½ cups (355g) Warm Water

6 tbsp (85g) Unsalted Butter

1 large Egg

 

Filling:

¼ cup (55g) butter, room temp 

½ cup (100g) brown sugar

1 tbsp cinnamon

 

Cream Cheese Icing:

120g cream cheese, room temp

¼ cup (55g) butter, room temp

1 cup (120g) icing sugar

2 tsp vanilla

 

Procedure:

1. In a microwave-safe bowl or jug, combine the water and butter (cut into cubes). Microwave for 30–45 secs until warm (not hot) — butter will be partially melted.

2. In a large bowl, whisk 2 cups of flour with sugar, yeast & salt.

3. Pour the wet mix into the dry mix, add the egg, and stir together.

4. Add 2 more cups of flour and mix. The dough will get thick and sticky.

5. Add ½ cup of flour and mix again. Once too thick to stir, use your hands to knead. Add another ¼ cup of flour as needed until it forms a soft, tacky dough. Press a finger into the dough — if it sticks too much, add another ¼ cup flour and knead again.

6. Once smooth and slightly tacky, shape into a ball and let rest uncovered for 10 mins (it’ll puff slightly).

7. Roll dough on a floured surface into a 10x15-inch rectangle.

8. Spread the softened butter across the surface, leaving a 1–2cm border. Then sprinkle evenly with brown sugar and cinnamon.

9. Roll up tightly from the long edge into a log. Gently squeeze the ends to even it out.

10. Slice into 12 even pieces — use unflavoured dental floss or a sharp knife for clean cuts.

11. Arrange rolls in a greased or lined dish. Cover with a towel and let rise for 1 hour in a warm spot until doubled in size. Tip: proof in a warm (but turned off) oven if your kitchen is cool.

12. Bake at 180°C for 25–30 mins until golden and puffy.

13. For the icing: use a cake mixer or mash cream cheese & butter together until smooth. Add icing sugar & vanilla, then whisk/combine until silky. Spread over warm rolls so it melts into the swirls.
