Dark Chocolate Covered Chickpeas

Ingredients:

2 x 400g can of chickpeas, rinsed and drained

20ml extra virgin olive oil

180g dark chocolate (>70% cacao)

A pinch of salt


Procedure

  1. Rinse a can of chickpeas

  2. Toss with oil and a pinch of salt

  3. Roast at 180°C fan forced for 15–20 mins, then cool completely.

  4. Coat in melted dark chocolate, can use the microwave 

  5. Spread on a tray and freeze until set (10–15 mins)

  6. Store in the fridge in an airtight container and enjoy!

A great high fibre tasty after dinner snack!
