Ingredients
2 cups Frozen Peas, thawed
Half a large Zucchini, grated
1 fresh Chilli, sliced
2 tsp Garlic Paste
4 Spring Onions, trimmed, chopped
½ cup Semolina
4 tbps Almond Meal
¼ cup EVOO (plus extra to drizzle)
8 Eggs (2 for fritters, 6 to be hard boiled)
100g Low-Fat Plain Greek Yoghurt
Salt & Pepper to taste
Procedure
1. Process peas, zucchini, onion, garlic, chilli and two eggs in a food processor until a rough paste forms.
2. Transfer to a bowl and stir in semolina and almond meal. The mixture should be soft but not runny, add more semolina if needed. Season to taste with salt and pepper.
3. Heat half the oil in a large frying pan over a high heat. While heating pan up, boil some water. After it reaches a boil, add the 6 remaining eggs, cover, turn off the heat, and let it sit for 12 minutes. After cooking, immediately transfer the eggs to cold water or ice bath to stop the cooking process.
4. Place 2-3 heaped tablespoons of mixture in pan and cook for 1-2 minutes. Flip and cook for a further 1 minute or until crispy. Remove from pan and cover to keep warm. Repeat with remaining mixture and oil.
5. Serve fritters with hard boiled eggs and dollop of greek yoghurt and drizzle with a little extra oil and season with salt/pepper. Enjoy!
