High Protein Greek Chicken Gyros

Ingredients:

Flatbread:

140g Self-Raising Flour 

160g Greek Yoghurt 

2 pinches of Salt

Sprinkle Greek Garlic Seasoning

 

Fillings:

200g Chicken Yiros Meat

1/2 Punnet Cherry Tomatoes, sliced

50g Iceberg Lettuce, shredded

50g Low Fat Shredded Cheese 

 

Tzatziki:

60g Greek Yoghurt

1 Small Cucumber

1 Clove Garlic, Minced 

Dried Dill, sprinkle 

1 tsp Extra Virgin Olive Oil 

Lemon Juice, to taste 

 

To Serve With:

200g White Potatoes, chopped into Chips 

Sprinkle Greek Garlic Seasoning 

 

Procedure:

1. Make your flatbread by adding all ingredients to a bowl, mix well until dough forms, then sprinkle some additional flour onto a clean surface, and cut the dough in half, and roll it out with a rolling pin into a round shape. 

2. Wash the potatoes, then slice and season with mingle seasoning. Spray with olive oil and air fry at 200°C for 25 minutes.

3. Make the tzatziki by grating the cucumber and then squeeze out all the excess water with a paper towel. Add to a bowl along with yoghurt, garlic, dill, olive oil and a squeeze of lemon juice.

4. Add chicken to a pan on medium heat. Fry for 8-10 minutes until cooked through.

5. Add olive oil to pan and heat up the flatbread for 4 mins or until lightly golden brown, flip and cook the other side. 

6. Assemble flatbread in foil, then add the tzatziki, lettuce, chicken, cheese, potatoes, cherry tomatoes, and more tzatziki. Add extra chips on the side if you wish and enjoy!!
