Ingredients:
400g of Sweet Potato
1 tbsp paprika
1 tsp cinnamon
A pinch of salt and pepper
1 tsp of olive oil
200g lean beef mince (less than 5% fat)
½ packet of taco seasoning
2 tbsp honey
Lemon juice
Garnish
½ Avocado
60g Cottage Cheese
Procedure
1. Chop the sweet potatoes. Season with paprika, cinnamon, salt, and pepper. Drizzle over the olive oil and mix well. Air fry or cook in the oven at 200°C for 20-25 minutes until cooked through.
2. Add the mince to a pan on medium heat, break it down, and fry until brown.
3. Add the taco seasoning along with a dash of water. Mix well and cook for another 5 minutes.
4. Make the hot honey by mixing the honey, a squeeze of lemon juice, and a pinch of chilli flakes.
5. Divide the sweet potato and taco mince into two bowls. Top each bowl with the cottage cheese, avocado, hot honey and parsley.
TIPS
For more colour and nutrients add some chopped spinach and tomato to the bowl!
