Ingredients:
400g Skinless Salmon Fillets, (cut into 2cm pieces)
200g Soba Noodles
4 Tsp Extra Virgin Olive Oil
1 Small Red Onion, chopped
2 Bunches Broccolini, chopped
1 Cup Baby Spinach, chopped
3 Large Carrots, thinly sliced
½ Bunch Spring Onions, sliced
1 Clove Garlic, chopped
1 Tbsp Fresh Ginger, minced
1 Tbsp Oyster Sauce
Sesame Seeds, to garnish
Chilli Flakes, to garnish (optional)
Procedure:
1. Prepare the soba noodles according to the packet instructions. Drain and set aside.
2. Heat 1 teaspoon of the oil in a large wok or pan over high heat. Add the salmon and cook for 2-5 minutes until golden. Transfer to a plate.
3. Return the wok to high heat and add the remaining oil with the red onion, garlic, and ginger. Stir-fry for 30 seconds or until aromatic. Add the broccolini and carrot and stir-fry for a further 2-5 minutes or until just tender.
4. Add the oyster sauce to the wok with the spinach, salmon, and noodles and stir-fry the full mix for 1 minute or until heated through.
5. Serve sprinkled with chopped spring onions, sesame seeds and chilli. Enjoy!
