Sweet Veggie Bolognese

Ingredients:

300ml Bolognese Sauce 

400g Can Diced Tomato 

500g Extra Lean Beef Mince

2 Cups Very Finely Grated Sweet Potato

2 Cups Very Finely Grated Carrot

1 Teaspoon Minced Garlic 

1 Small Onion, diced

3 Cups Cooked fresh Fettuccine Pasta

⅓ Cup Parmesan Cheese (for toppings)

1 tbsp Garlic Infused Olive Oil

2 tbsp Mixed Italian Herbs 

 

Procedure:

1. In a pan with a dash of oil, cook your garlic and onion for 20 seconds. Add your sweet potato and carrot, and cook while stirring for a few minutes. 

2. Add your mince and mix the grated veggies through and seal the meat. Once sealed, add your bolognese sauce, canned tomatoes and herbs. Simmer for a further 25 minutes. Add a bit of water if more moisture is needed in sauce.

3. While the bolognese is simmering, cook the pasta.

4. Add bolognese sauce to pasta and top with parmesan cheese - enjoy!
